As the weather cools down, I’m always looking for a comforting, warm bowl of soup to take the chill off and to showcase my favorite fall produce. But I have to be honest with you, it was 90 degrees here in Los Angeles today, so there’s no cool down for me just yet. For now I’ll just fake it til I make it, and I’m definitely channeling some cozy fall meals in this post. Here are some of my favorites from the blog to keep you warm and nourished all season long!
Mushroom and Brie Soup
This soup is decadent and flavorful ~ it’s the perfect canvas to show off fancy wild mushrooms from the farmers market if you’ve got them, but plain old supermarket variety will work too. I like to choose brown cremini over white buttons for depth of color and flavor.
Broccoli Parmesan Chicken Soup
The combination of broccoli and cheese is pure comfort in a bowl, and it’s almost universally loved. Throw in some rotisserie chicken and you’ve got a fantastic meal.
Luxurious Beef and Barley Soup
This soup is as hearty as it gets. I grew up on the canned stuff and this amazing homemade version brings back warm memories.
Brussels Sprouts and Bacon Soup
One of my favorite cold-weather vegetables ~ yes, Brussels sprouts! ~ teams up with bacon, shallots, and sharp cheddar cheese for a delicious and creamy soup that no one expects.
Finnish Salmon Soup
This soup has been a perennial favorite on the blog, and for good reason, it’s somehow both light and rich at the same time. The Finns know a little something about keeping cozy, and this soup with its big chunks of salmon, potatoes, carrots, and leeks really does the trick.
Classic Chicken Soup
This is grandma’s famous chicken soup, with a colorful twist or two. There’s nothing like it for healing body and spirit.
