Jamaican Chicken with Rum and Pineapple

Quick — what do you think of when someone says Jamaican food?   If you’ve never been to Jamaica that can be a tough one.  I think rum, jerk chicken, definitely allspice, pineapple, lime… did I say rum?   This chicken has a little bit of all that going on, and a whole lot more.

Today I’m guest posting over at my friend Christina’s blog — the lucky duck is in Jamaica for the week so I thought it would be fun to try to grab a little bit of the tropics for those of us left behind.  This chicken dish will knock your socks off – it’s marinated with a heady mix of jerk spices, brown sugar, fruit juice, hot chili pepper, and, of course, rum.  Then it’s grilled and baked with fresh pineapple and lots more of that crazy sauce.  Head on over to Christina’s Cucina to read the rest of the post and get the recipe…while you’re there poke around a bit, you’ll love her blog, she’s one of the most talented and passionate cooks I’ve ever met, no kidding.

    I remember I got a little bottle of Jamaican white rum a few years back, and used it in a chicken sauce, and I was pleasantly surprised when it turned out as well as it did. I don’t think I added pineapple, but that sounds amazing :D So fresh! x

    Wow, this is gorgeous. Even though I’ve never been to Jamaica, after living in the islands for a long time, I learned that everything is better with a little rum. I find myself running into more and more people from Jamaica today. I’ll admire the lilt in their voice and ask where they’re from and the answer more often than not is Jamaica.
