My favorite Recipes of 2017

My favorite Recipes of 2017 ~ these are the ones I personally loved, and if you missed them, I recommend giving them a try.  2017 was a pretty tasty year!

 

JANUARY

FRIED OLIVES WITH SPICY YOGURT

I’ve been making FRIED OLIVES forever, but the idea of putting them on a bed of herby yogurt was a fun way to start off the year.  DILL PICKLE AND BRAT SOUP came in a close second this month.

FEBRUARY

FALAFEL SALAD BOWL

I love to inject a bit of fresh crunch into my mid-winter diet and this bowl does the trick.  The falafel is a brilliant emerald green inside thanks to tons of fresh herbs.  A yummy SHRIMP PAD THAI was another highlight of February.

 

MARCH

THAI BEEF SALAD

I developed this recipe straightaway after having an amazing one at a Thai restaurant.  I think my version turned out even better.

 

APRIL

COWBOY CAVIAR

This colorful dip/salsa was not only a favorite of mine, it was a huge hit with readers.  It’s beautiful, healthy, and fun to make.  I like to serve it as a side salad with burgers, grilled fish, or chicken.

Cowboy Caviar is a healthy and satisfying salsa, dip, or side salad ~ everybody is going to beg you for the recipe!

 

MAY

INA GARTEN’S COCONUT CUPCAKES

This isn’t my recipe, but Ina is a hero of mine, and her cupcakes are the bomb.  My TROPICAL HOT DOG BAR was another favorite from the month of May.

Ina Garten's Coconut Cupcakes ~ these easy-peasy tender coconutty cupcakes are topped with the most insanely delicious coconut cream cheese frosting ~ they're perfect for spring flings!

 

JUNE

BEEF AND BROCCOLI NOODLE BOWLS

It’s such a thrill to be able to make your own authentic Asian food at home.  All you need are the right ingredients and a few simple techniques.  This noodle bowl was a big hit at our house.

 

JULY

NUTELLA S’MORES BARS

I love these bars, end of story.  Try them once and you’ll be making them for the rest of your life.

 

AUGUST

FIRE ROASTED SALSA NEGRA

This salsa is mind blowing ~ the dark color comes from charring fresh tomatoes and peppers and then blending them into this rich puree.  It’s not to be missed.  August was also the month I brought back these unique MOROCCAN LEMON AND CARDAMOM MEATBALLS from the archives.

 

SEPTEMBER

APPLE CIDER DOUGHNUT CAKE

I had a hard time choosing between this fluffy cake and my EASY LOW SUGAR WINE JELLY.

 

OCTOBER

HOMEMADE NUTELLA LIQUEUR

This homemade liqueur was one of the highlights of 2017.  Drink it straight up, in cocktails, or in coffee, but definitely try it.  Makes the perfect host gift, too.  I loved it so much I also made a non-alcoholic version this month, too: DRINKABLE NUTELLA.

 

NOVEMBER

RYE AND CARROT SALAD

I couldn’t stop eating this unusual salad, and it started me thinking about doing a series of hearty grain salads going forward into 2018.  The gluten free craze has put whole grains in the shadows for a while, but I think they’re due for a comeback.  On the other end of the spectrum but equally good were those MEATBALLS AL FORNO.

 

DECEMBER

GLUTEN FREE TANGERINE CAKE

December was a prolific month, it was hard to choose a favorite ~ I could have gone with my HOMEMADE GINGERBREAD ICE CREAM or my GLAZED GINGERBREAD BUNDT CAKE, too ~  try them all!

    I’ve just discovered you and I love you already. I’m a Chilean single girl in Parral who only owns a microwave and your chocolate fudge saved my sanity today, but I made it with melted chocolate icecream since I had very few chocolate chips, and turned out perfect. Thank you! I will be checking regularly, and I wish my mom cooked like you!

    I have a question Sue…on the Nutella S’More’s Bars….I would like to double it…would it ruin the recipe. Also…..if I double the recipe…..what size pan should I use……and if I only make a single batch….what size pan 8 x 8 or 9 x 9…..could you help me. Thank you……

      For the single batch I use a 9×9, and I think you can double it for a 9×13 pan. They can be slightly thinner or thicker, in any case.
