Effortless Entertaining: Roasted Olives
Easy Roasted Olives ~ this simple and elegant Mediterranean inspired appetizer is my go to for parties of all kinds. Healthy olives fit into most everyone's diet, so it's always a hit.
or so assorted olives, pitted or unpitted (or allow about 1/2 cup per person). Seek out a good, colorful assortment.
or so of good quality feta cheese, cut in small bite sized cubes.
or 2 red or green jalapenos, thinly sliced, seeds and all (optional)
juice of 1 lemon
handful of fresh thyme
salt and fresh cracked pepper to taste
good quality olive oil
good quality red wine or sherry vinegar
Set oven to 400F
Spread the olives out in a casserole dish or gratin dish. Toss with all the rest of the ingredients and taste the dressing to adjust any of the elements.
Bake for about 20 minutes until bubbling.
Replace the roasted thyme with fresh sprigs, and serve hot with crusty bread.
NONE of the amounts are set in stone. This is the kind of thing you put together by eye. Taste the dressing as you go and adjust to your liking. Add minced garlic if you like.
