Preheat your oven to 325F. Butter a 9x9 square baker and line with parchment paper for easier removal (it's optional.)
In a medium mixing bowl, whisk together the 1 1/4 cup flour, 2/3 cup rolled oats, 1/2 tsp baking soda, 1/2 tsp salt, 1/4 tsp cinnamon, 1 cup dark chocolate chips, and 3/4 cup chopped walnuts. Set aside.
In another medium mixing bowl, combine the 1/2 cup butter, melted and slightly cooled, 1/2 cup brown sugar, 1/4 cup sugar, 1 large egg, and 2 tsp vanilla extract. Mix well until smooth and everything is well incorporated.
Fold the dry ingredients into the wet ingredients, being careful not to overmix.
Spread the dough into your prepared baking dish, getting it as even as possible.
Bake for 30-35 minutes, until puffed up and just starting to turn golden brown around the edges. Be careful not to over bake your bars, they will still be slightly soft in the center, blondie style.
Remove from the oven and allow to completely cool in the pan before removing and slicing.
