Mix the 1/3 cup Kodiak whole grain power cake mix the 1 Tbsp rolled oats, 1 Tbsp pumpkin puree, 1/4 tsp pumpkin spice, 1 pinch of salt and 1/3 cup water in your mug. Stir to dissolve the dry flour, but the batter will still have a few small lumps.
Microwave for one and a half minutes (90 seconds).* Remove and add a pat of butter, toasted pecans, and maple syrup, if desired.
Nutritional info is for pancake bowl only, butter and syrup add 4g fat, 12g sugar, and 85 calories to your bowl. So even “dressed” with butter and maple syrup, it’s still a high-protein, higher-fiber, whole-grain breakfast ~ way more balanced than toast or most cereal.
Notes
*Microwaves vary (Mine is 1200 watts) so your exact time may vary. Cook until the pancake is puffed up in the center and is just beginning to pull away from the sides. Don't over cook!If you want to add 1 tablespoon mini chocolate chips:
Stir half in with the batter.
Microwave for 30 seconds, then add the rest on top.
