This easy smoked trout salad sandwich features flaky hot-smoked trout tossed with a creamy, fresh herb dressing on toasted bread. A quick lunch or light supper for smoked fish lovers.
1tspcreamed horseradish, or more to taste, optional
sea salt and fresh cracked black pepper to taste

4small slender sandwich rolls, lightly toasted
thinly sliced ripe tomato
lettuce leaves
thin slices of red onion
Instructions
Put the 1/2 lb hot smoked trout, 1/4 cup celery, 1/4 cup red onion, 1 Tbsp celery leaves, and 1 tsp fresh dill in a bowl. Give everything a gentle toss to combine, but try not to break up the fish.
Whisk together the 2 Tbsp mayonnaise, 2 Tbsp sour cream, 1 Tbsp lemon juice, and 1 tsp creamed horseradish, or more to taste (if using.) Give it a taste and add salt the pepper to your liking.
Gently add the dressing to the bowl with fish and toss super gently to combine.
Spoon a generous amount of salad over the bottom half of your lightly toasted sandwich rolls. Top with the lettuce, tomato, and onion. Slice the rolls on a diagonal and serve.
Notes
Look for hot smoked trout in the refrigerated section of your fish or deli counter, usually shrink wrapped or wrapped in plastic.
