Wash the cucumbers thoroughly. Do not peel, leaving the skin on will retain more nutrients.

Cut the cucumbers into chunks that will fit easily into your blender or juicer. Blend until smooth. Strain through a fine mesh sieve if desired.
juicer method
Cut the cucumbers into chunks that will fit easily into your blender or juicer. Simply feed the cucumber chunks into the juicer.
grater method
Grate the whole cucumbers and then wrap in cheesecloth or a thin kitchen cloth to squeeze out the juice. Use hard pressure to get all of the juice out. Discard the solids.
Stir in the lemon or lime juice for a refreshing, tangy flavor. You can add a dash of salt if you like.
Pour the cucumber juice into a glass and enjoy immediately or refrigerate for up to a day.
Notes
To make cucumber water (or cucumber aqua fresca) mix your cucumber juice with cold water in a 1:2 ratio of juice to water.
