From paper thin slices to thick spears cucumbers star in so many of our favorite dishes. These cucumber recipes are simple and easy to make, and have one thing in common ~ they’re all super refreshing!
Why I rarely buy classic cucumbers anymore
Classic cucumbers (or slicing cucumbers) are the dark green thick skinned cukes I grew up with but never buy. Why? They tend to be watery, with tough skins and large seeds. They are often waxed to extend their shelf life, too. There are much better options:
English Cucumbers (Hothouse Cucumbers):
Aka seedless or European cucumbers, these are long, slender, and usually shrink-wrapped in plastic. They have a thin skin so you never need to peel them, and very few seeds.
Persian Cucumbers:
Smaller and thinner than slicing cucumbers, Persian cucumbers have a crisp texture and are sweet with a mild flavor. They’re common in Middle Eastern and Mediterranean cuisine. I find them packaged in groups of 4-6 in my grocery store. I use these for pickles, and salads.
Pickling Cucumbers:
Shorter and bumpier than slicing cucumbers, these are primarily used for making pickles. They have a firm flesh that holds up well during the pickling process. These are most often found in the summer season.
The most popular cucumber salad on my site, and for good reason, the Asian flavors are fabulous. Slice small cucumbers on the bias, not too thin, so they can absorb more of the fabulous dressing but not become mushy.
I love this cucumber recipe because the sweet corn makes it so much more hearty and satisfying than most cucumber salads. This is the perfect end of summer salad.
This cucumber salad is as fun to make as it is to eat. Little Persian cucumbers are the perfect size for the checkerboard styling with cherry tomatoes, melon, and cheese. The trick is getting everything the same chunky height for this most elegant of cucumber recipes.
This Middle Eastern salad is all about the crunch so I thickly dice my cukes into half or quarter moon shapes. Lots of fresh herbs and a lime and olive oil dressing make this a favorite of mine.

Healthy hydrating cucumber recipes to refresh your meal planning right now!
Wash the cucumbers thoroughly. Do not peel, leaving the skin on will retain more nutrients.

Cut the cucumbers into chunks that will fit easily into your blender or juicer. Blend until smooth. Strain through a fine mesh sieve if desired.
juicer method
Cut the cucumbers into chunks that will fit easily into your blender or juicer. Simply feed the cucumber chunks into the juicer.
grater method
Grate the whole cucumbers and then wrap in cheesecloth or a thin kitchen cloth to squeeze out the juice. Use hard pressure to get all of the juice out. Discard the solids.
Stir in the lemon or lime juice for a refreshing, tangy flavor. You can add a dash of salt if you like.
Pour the cucumber juice into a glass and enjoy immediately or refrigerate for up to a day.
Notes
To make cucumber water (or cucumber aqua fresca) mix your cucumber juice with cold water in a 1:2 ratio of juice to water.
