3cupsassorted olives, pitted or unpitted (or allow about 1/2 cup per person). Seek out a good, colorful assortment.
1cupfeta cheese, cut in small bite sized cubes.
1-2red or green jalapenos, thinly sliced, seeds and all (optional)
juice of 1 lemon
handful of fresh thyme
salt and fresh cracked pepper to taste
3Tbspgood quality olive oil
2Tbspgood quality red wine or sherry vinegar
Instructions
Set oven to 400F
Spread the olives out in a casserole dish or gratin dish. Toss with all the rest of the ingredients and taste the dressing to adjust any of the elements.
Bake for about 20 minutes until bubbling.
Replace the roasted thyme with fresh sprigs, and serve hot with crusty bread.
