Put a layer of chilled whipped cottage cheese in each glass.
Top with cherries, adding a bit of the juice as well. Then sprinkle them with granola and sliced almonds.
Repeat the layer and top your parfaits with an extra cherry or two.
Enjoy right away.

*How to whip cottage cheese
Place cottage cheese in your blender or food processor. Blend until smooth and creamy, scraping down the sides of the machine once or twice. Note: a high speed blender will make the silkiest texture.
Taste and add a touch of honey or a drop of almond or vanilla extract if you like.
You can use your whipped cottage cheese right away, or chill it for several hours to thicken it up.
I like to pack it into a large jar and use throughout the week. It will last up 5 -7 days in the fridge.
