Once you taste a fresh fig, there’s no going back. The only trouble is these special Mediterranean fruits are around for a ridiculously short time. They’re technically in season from June through October, but you’re most likely to spot them in supermarkets in late summer and early fall.
There are hundreds of fig varieties, but you’ll probably only encounter a handful of them. Luckily, you can pretty much use them interchangeably in fig recipes.
- Black Mission are my favorites, with deep purple skin and a stunning blush-pink interior. They have a rich, intensely figgy flavor, so keep an eye out for them.
- Kadota have spring-green skins and pretty pink interiors.
- Brown Turkey have brownish-purple skins with soft pink interiors.
- Calimyrna are pale green to golden with beautiful amber-pink flesh.
