5 Vibrant Summer Dinner Bowls~ sure, we have to eat dinner, but it’s summer, and the classic square meal just isn’t cutting it right now. I’m going with nourishing, satisfying meals-in-a-bowl bursting with fresh flavors ~ exactly what I’m craving this month.

All things being equal, I prefer dinner in a bowl and I’ve got lots of them on the blog, from familiar main-course salads to more exotic Buddha bowls, pho, and other noodle bowls for every season and every mood. I lined up a few my freshest, most colorful bowls here that make the perfect summer meal. Whether you call them bliss bowls, nourish bowls, goddess bowls, or just…dinner, this kind of eating is low-key, healthy, and endlessly customizable. They’re also veggie-forward and tend towards low-carb, so let’s fill our bowls and eat!

If you’re flirting with low-carb eating this summer, a burger salad bowl is just the thing. Once I started having my burgers this way I realized the buns weren’t bring all that much to the party anyway.

This might be my favorite summer meal in a bowl ~ I love all the mediterranean flavors and textures in this veggie dinner. I think my falafel recipe is pretty amazing, too.

Steak Fajita Bowls with Chimichurri Sauce

I love the bright flavor of chimichurri sauce, and it really brings everything together in this satisfying bowl. You can cook the steak and peppers on the grill if you’ve got it going this summer, or right on your stovetop.

    Love these! I got a daughter to follow you and she moved back home for a bit so we meal plan using VFGI recipes! My fav is the Falafel Salad. I have never had such flavorful and colorful falafels! Well worth the effort. Thanks for the great pics to reel us in and the blurbs to make our mouth water and then the recipes that actually turn out!

      Oh thanks so much Anita, I bet you’re loving having your daughter back home for a bit. I had my youngest home for a while and she was cooking up a storm. Now she just calls in her questions 😉 I adore falafel, the greener the better, so I’m glad you like my recipe. I’m going to have to make up a falafel salad soon, the temps are soaring here.
