Thick, chewy oatmeal chocolate chip cookie bars are where cookies and bars meet in the middle ~ and nobody complains.

These oatmeal chocolate chip cookie bars hit that sweet spot. Everything you love about a classic cookie ~ just easier, thicker, and a little more interesting.
What’s going on here:
- rolled oats for chew
- bittersweet chocolate for depth
- walnuts for crunch
- a tiny hint of cinnamon to pull it all together
And the texture?
Soft, buttery, and sliceable ~ never dry, never crumbly.
Make these oatmeal chocolate chip cookie bars your own:
Add raisins or dried cranberries, swap in pecans, or skip the nuts entirely ~ this is the kind of recipe that plays along.

Why make cookie bars?
- They bake evenly ~ no spreading issues or burnt bottoms… just one consistent pan.
- No chilling the dough ~ just mix and bake.
- They hold moisture better ~ thicker dough means softer, chewier results
- They’re more forgiving ~ dough a little off? oven running hot? They still turn out.

Yes, definitely! Use any kind of chip, or chopped bar chocolate that you like.
Either will work. Old Fashioned oats will give a slightly more chewy texture, and they would be my choice.
Yes, feel free to leave out the nuts. You can replace them with dried raisins or cranberries if you like, or just omit them entirely.
Yes ~ these bars actually get better after a day. Store at room temperature, well covered to keep them from drying out.
Just a pinch of cinnamon doesn’t read as “spiced” ~ it adds a subtle ‘cookie’ flavor and makes the chocolate taste richer.

- 2/3 cup rolled oats
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1 cup dark chocolate chips
- 3/4 cup chopped walnuts
- 1/2 cup butter, melted and slightly cooled
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1 large egg
- 2 tsp vanilla extract
Instructions
- Preheat your oven to 325F. Butter a 9×9 square baker and line with parchment paper for easier removal (it's optional.)
- In a medium mixing bowl, whisk together the 1 1/4 cup flour, 2/3 cup rolled oats, 1/2 tsp baking soda, 1/2 tsp salt, 1/4 tsp cinnamon, 1 cup dark chocolate chips, and 3/4 cup chopped walnuts. Set aside.
- In another medium mixing bowl, combine the 1/2 cup butter, melted and slightly cooled, 1/2 cup brown sugar, 1/4 cup sugar, 1 large egg, and 2 tsp vanilla extract. Mix well until smooth and everything is well incorporated.
- Fold the dry ingredients into the wet ingredients, being careful not to overmix.
- Spread the dough into your prepared baking dish, getting it as even as possible.
- Bake for 30-35 minutes, until puffed up and just starting to turn golden brown around the edges. Be careful not to over bake your bars, they will still be slightly soft in the center, blondie style.
