White Chocolate Energy Bites ~ this easy homemade chocolate candy is a healthy-ish dessert or snack that will give you a boost of energy in a cute little package!
My Dark Chocolate Detox Bites have been so popular, and they were such fun to make, I decided to make a white version! Like the originals, these are sort of a cross between candy and trail mix. I loaded them up with a crazy pile of nuts, seeds, and fruit, but feel free to be a little bit more restrained if you like. I think it’s my job to give your creativity a kick start, but you should definitely make these your own.
These can’t claim to be quite as healthy as the originals because white ‘chocolate’ isn’t really chocolate at all, it doesn’t contain any cocoa solids, and so it doesn’t have any of those great antioxidants that dark chocolate is known for. All that aside, these will give you a little boost of energy, or a little hit of satisfaction during that after dinner danger zone when you might otherwise demolish a whole pint of ice cream.
This is another recipe where I’ve cleaned out the cabinet of all my little leftover bits and bobs. Dried figs, pecans, goji berries…the choice is yours…if it fits on there, go for it.
Get all your add-ons chopped and ready beforehand, because once your chocolate is melted and poured, you’ll want to work fast before it sets up. Press down slightly so the toppings adhere well, and after the chocolate is set you can stack, bag, or box them up.
I don’t often call out brands in my recipes, but in this case I recommend Nestle’s white chips because I think they melt without any of the issues that I sometimes have with real white chocolate. Another way to go is to buy white bark or candy melts. These are formulated especially for candy making and melt beautifully. You can sometimes find them in larger supermarkets during the holidays, in the same section as your baking chocolates. Each Energy Bite requires about an ounce of chocolate, so you can plan.
For reference I used dried figs, pineapple, papaya, cranberries, goji berries, and blueberries for the fruit. For nuts I used Spanish peanuts, pecans, hazelnuts, almonds and pistachios. The seeds are chia, hemp, and pumpkin. There’s also some toasted coconut on there.
White Chocolate Energy Bites
Ingredients
- 12 oz bag of white chocolate chips, I recommend Nestle, they melt the easiest or 12 ounces of white chocolate, chopped finely
- 1 tsp coconut oil
- assorted nuts such as pecans, almonds, hazelnuts
- assorted dried fruit such as figs, apricots, pineapple, raisins
- assorted seeds such as flax seeds, pumpkin seeds, sunflower seeds, chia and hemp seeds
Instructions
- Finely chop the nuts and the dried fruit so they are of a size that will fit on top of the bites. Leave the seeds whole.
- Lay out a sheet of parchment or waxed paper to work on.
- Put the chips or chocolate pieces in a microwave safe bowl with the coconut oil, and microwave on high for one minute. Remove and let sit for 30 seconds, then stir. If all the chips aren't completely melted, microwave for another short burst and stir until they are.
- Use a tablespoon to spoon out a blob of chocolate, and nudge it into a circle shape. Work with one at a time and add the fruit, nuts, and seeds to to top. Press down just slightly to assure that they stick.
- When all the chocolates have hardened, remove them from the paper and store in an airtight container, at room temperature or in the refrigerator.
