Karen at Honestly Yum gives us a great tip for making meringues, she says to “wipe down the whisk attachment and the bowl of a stand mixer with a little vinegar or lemon juice and wipe clean with a paper towel.” This will insure that no stray oil or grease will prevent your egg whites from reaching their full potential like hers obviously did.
can you make meringues with powdered sugar and have them turn out the same?
Generally you can substitute powdered sugar. You may need a bit more of it, and if your recipe contains cornstarch, you can leave it out because powdered sugar already contains it. Be sure to sift it first.
