These 5 Easy Whole Grain Salads are hearty, healthy and vegan-friendly. They’e simple enough to pull together for a weeknight dinner, gorgeous enough for special occasions, and the leftovers make the BEST packable lunches!

Grain salads are my favorite way to get a healthy bit of crunch during the cooler months. Whole grains like wheat and rye berries, barley, millet, quinoa, etc., can be cooked in their whole state and then made into wonderful salads that can be served chilled or at room temperature. Unlike green salads, grain salads can be made up to a couple of days in advance, making them perfect for the busy entertaining season. I’ve included some hearty rices in this collection, too, even though rice is technically a grass seed, not a grain. These recipes are great to have on hand when you need to add alternative-diet-friendly dishes to your holiday menus.

Whole Grains
I usually buy my whole grains like wheat berries from Bob’s Red Mill because I trust the quality and I know they’re fresh. I avoid supermarket or health food bulk bins because I’ can’t be sure how long they’ve been sitting around, and whole grains spoil easily. If you buy a few bags they can be stored in the freezer until you’re ready to use them.
