By my calculations there are 13 weeks of summer, and that just happens to coincide with healthy salmon season ~ so here are 13 of my most mouthwatering salmon recipes to keep you in tip top shape all summer long.
RAINBOW SALMON SKEWERS ~ if you want a quick and easy salmon dinner, skewer it! Rainbow peppers and onions are pretty, but you can add mushrooms, summer squash, or any other quick cooking veggie.
MEDITERRANEAN SHEET PAN SALMON ~ if you’re sharing your salmon with friends it makes sense to go big with a whole side of salmon. Ask for larger cuts at your regular supermarket fish counter, they’ll be happy to help, or check out Costco and similar stores for great deals.
ROASTED SALMON WITH KIWI SALSA ~ this is my latest recipe and current favorite way to eat salmon: topped with a tumble of fresh kiwi salsa. I love this with mixed fruit salsa or strawberry salsa as well.
SALMON WITH PINEAPPLE JALAPEÑO SALSA ~ this tropical themed salmon goes great with margaritas, mai tais, and piña coladas.
GRILLED SALMON TACOS WITH CILANTRO CREMA ~ you can use leftover salmon in these tacos, which means you can spend all your time dreaming up fun toppings.
GRILLED WILD SALMON SALAD ~ grilled salmon over greens is a fabulous summer meal, but grilled salmon over grilled greens is even better!
GRILLED SALMON SALAD WITH SPRING GREENS~ this little folly of a salad is fun to improvise on with whatever is lying around from the rest of the week’s meals…and don’t forget an edible blossom or two.
CREAMY LEMON DILL SALMON ~ salmon is a superfood, yes, but it can also be incredibly comforting…
SALMON AND ZUCCHINI BURGERS ~ this is salmon’s take on a burger and it’s to die for. This meal is budget friendly, too.
FINNISH SALMON SOUP – LOHIKEITTO ~ for cool summer nights, or when your significant other cranks the air conditioning way too high.
SMOKED SALMON OPEN FACED SANDWICHES ~ a super elegant appetizer, lunch, or, depending on how you load them up, light supper.
MELT IN YOUR MOUTH SHEET PAN SALMON ~ I challenge myself to wedge as many gorgeous colors onto the sheet pan as I possibly can.
SAVORY SMOKED SALMON ‘CHEESECAKE’ ~ bet you’ve never had this before!
Hi Sue,
I swear, you have the most beautiful food I’ve ever seen and all the recipes I’ve tried have been scrumptious! Thank you so much! These Salmon recipes look wonderful and I love all the soups. I’ve learned a lot from you and I am no longer afraid to make a ‘new’ soup for myself at the drop of a hat. I’m nearly 78 and live with my cat and still love to cook and bake. AND, for Christmas, I asked for the beautiful Iron pot with a lid that you said you loved so much. I see why you love it. It heats evenly all over the pan, any browning comes right up, it’s SOOO easy to clean, and I’ve made everything from soup to Hamburgers and asparagus in it. Plus, it’s gorgeous! I got the blue one. My problem with it is that I won’t be able to handle it many more years because I’m old and not all that strong. That pot weighs two tons! It will be a nice thing to hand down to my kids though. I’ll enjoy it as long as I can. And, I really DO enjoy it! Thank you for suggesting it.
Have you made a Salmon Bisque soup? I love bisques.
Thank you again, Sue! Happy New Year!
Love, Joyce Gibson
Oh gosh Joyce, thanks so much! And I totally hear you about those pots, they do weigh a ton. I’ll work on the salmon bisque, I love it too 🙂
I live in Alaska and we get or salmon fresh every year out of the ocean and the river and it’s so good! I love it just on the grill with nothing on it when it’s that fresh! But after eating it all winter this way we like to make up some recipes too, I make a good meatloaf my family likes and salmon patties also and of course tacos and many different sauces to marinate It in lol so I love finding all these pretty recipes thank you
Hey Denise ~ do you mean you make a salmon ‘meatloaf’? I would love to see that recipe!
Salmon is one of my very favorite meals! I have a little trick I do when I buy salmon. I cut off the thin little section near the tail end. (It always seems to get overcooked and dried out when I leave it on.) I put the cut off pieces in a bag in the freezer. When I have enough of the ‘scraps’, I thaw and poach them in seasoned water. Then, I flake the salmon, mix with some egg, bread crumbs, seasonings, etc., roll them in panko crumbs and fry them to golden, crispy deliciousness! I serve the patties on a bun with a generous drizzle of lemon dill sauce. Salmon patties made this way are so much better than patties made with canned salmon. Your salmon recipes look so tempting, and I’m absolutely going to make the kiwi salsa version. Thank you for another beautiful, tempting post!
I think salmon burgers made like you describe are one of my favorite things to eat, I can just taste yours from your description. I don’t think I have a regular salmon burger on the blog yet, and I need to fix that!
Forgot to add, recipes sound and look to be delish, the creamy dill and lemon salmon especially.
Hopefully I’ll be able to find a true wild salmon filet so I can give it a go.
Thanks again for taking the time to post your great food recipes!
I’m in Canada where in the last week we’ve had 3 consumer reports on our 6 pm news about how much fish/seafood is mislabeled 40% or more including salmon, in North America. It was quite the eye opener as being a consumer who will not buy farmed fish I now know the wild fish/seafood I’ve purchased in the past could very likely not be wild after all, and could also very well be a different species such as tilapia being sold/labeled as snapper. Stats for Canada 74% of sushi fish is not as claimed.. 38% of restaurant fish is not as claimed and 18 & of grocery store fish is wrongfully labeled.
This is not exclusive to Canada, mislabeling fish/seafood is also rampant in the US. You can find some of that info on the link & keep in mind this particular link only goes to 2012. Fish mislabeling has gotten worse since then according to our consumer alert representative. What I’ve learned from this is ask questions when buying your fish, if the answers given are vague or sound like excuses, find a different fish store

I’ve been reading about this too Joycelyn…I really love my supermarket and it’s the only place I buy fish because I trust them. Good info.
Sue all of these look amazing. We love salmon and always have it once a week but often I do repeat dishes that everyone loves. I love the kebobs, and actually have never made Salmon Kebobs so will be sure to try these. I think I’ll start with that and go from there. I’ll definitely be making all these – well the soup while I think I’d like it, I may have trouble convincing the others to indulge. Great post!!!
Thanks Vicki!
Very nice recipes!
Such a great collection of salmon recipes and yes, I will be eating salmon once a week all Summer! Thanks for the great inspiration 🙂
You’ve got my salmon fix all sorted out Sue! Love each and everyone of these lovely recipes. Thanks for rounding them up and making it easy 😉
I can eat salmon my whole life and just loving it…even just simply steamed. No kidding…I don’t even need salt. Well, my cats eat fish with me too, so I can’t season them at all..no salt, no lemon or they aren’t allowed to eat them..
I love every single salmon dish you serve here, Sue.
I love the thought of you and your kitties chowing down on delicious salmon 🙂
