Is it just me or is dip for dinner the best idea ever? When you think about it, it makes sense on so many levels. Maybe the game just went into triple overtime and you can’t leave the screen to go cook a meal, maybe you forgot to take the meat out of the freezer, skipped the market on the way home from work, can’t face any more dishes to wash…or maybe you just like dip…a lot. This is a judgement free zone here in the Great Island kitchen, it’s all good.

Sue-love your recipes and this post was really special. One note, for those who might waffle because cheese dips, technically speaking, don’t really ‘qualify’ as dinner. Hummus and any grain make a whole protein and is dinner for 70-80% of the world-Beans an Rice, or bread or corn tortillas, etc.
Jet Tila (of Food Network fame) gives away the ‘secret’ to creamy Hummus…DON’T drain and rinse the beans. It’s an emulsion that makes the Hummus creamy deliciousness! It’s how he does it in his restaurant. And for 78 cents a can at Walmart it’s still pretty cheap for a quick dinner. The work goes into making home made Pita bread-a labor of love for me. Thick fluffy ones like in the Greek Restaurants. Can’t wait to start on your 50 Hummus Hacks!
Thanks John! I have to respectfully disagree on the canned bean water, I do my best to remove any trace of ‘canned’ flavor from my beans, so I’m a drain and rinse rinse and rinse again fan. My secret to the absolute creamiest hummus is to use a Vitamix blender, and blend in some ice water at the end. Also lots of tahini 😉
