Give your oven the night off and make one of my favorite no bake desserts ~ they’re super chill, and always delicious. (We’re making these refreshing treats on repeat for the rest of the season.)

No Bake Strawberry Cheesecake
I posted this delicious cheesecake earlier in the summer and I need to bring it back to your attention, it’s the most delicious ‘non traditional’ cheesecake I’ve ever tasted, and I’m pretty sure you’ll love it. The texture is really special, so silky!

Chocolate Mousse Pie
Ok, for this recipe, a quick few minutes in the oven is needed to set the crust, but if you want to know a secret, I don’t bother to bake the crust in summertime…it’s fabulous either way, promise.

Lemon Icebox Pie
A summer classic, this cool, creamy and tart lemon pie is the perfect end to just about any summer meal I can imagine.

Banana Pudding Icebox Cake
The classic Southern no bake dessert made even cooler and creamier!

Easy Ice Cream Terrine
It might look fancy, but this dessert is so easy and so FUN to make with a few store-bought ice cream flavors. Mix and match your favorite colors, flavors, and textures for an amazing frozen dessert.

No Bake Raspberry Cheesecake Bars
Chocolate, raspberries, and creamy cheesecake. Does it get any better?

Queen Elizabethโs Chocolate Biscuit Cake
This classic no bake dessert from ‘across the pond’ has been vetted by the Queen herself!

Brown Sugar Bourbon Icebox Pie
If all the light, bright fruity flavors of summer aren’t exactly your thing, this rich brown sugar and bourbon-laced icebox pie surrounded by a dark chocolate cookie crust is for you.

Tiramisu
The grande dame of no bake desserts, tiramisu is sheer perfection on a hot night. This recipe makes individual portions.

Amazing, all of them! Thanks for sharing great recipes!
This no bake dessert roundup just might get us through the summer Sue. Love them all!
I live in south Florida. I love baking, but at this time of year, I donโt bake much. It makes the house too warm. I tend to go with the ice cream terrine if I need a dessert. I have made it several times, and like looking for different flavors of ice cream and sherbet to combine. One of my favorite combinations is vanilla ice cream and orange sherbet. Reminds me of a creamsicle. Yum!
I agree, the terrine is so fun, and so much room for creativity. Stay cool down there Donna ๐
Good morning, Sue. I’ve made No Bake Strawberry Cheesecake – twice – since you posted it. Used peaches instead of strawberries as hubby isn’t a strawberry fan. Excellent!.
Chocolate Mousse Pie just made the “make this soon” list. ๐
Sheila
So glad to hear this, I’ll have to try the peaches, they’re just starting to taste good right now ๐
We’ve had good peaches in the stores here in GA – for a change. There’s only two of us so I made a small amount of chunky puree and served it on individual slices rather than putting it on the entire cheesecake.
