This pumpkin pancake bowl recipe is part of a personal quest of mine, I’ve been on hunt for the best, easiest, most satisfying pancake bowl and I found it in my original protein pancake bowl recipe. Today’s pumpkin pancake bowl is a fall variation that I cannot stop making. It’s my go to breakfast these days.

5 ingredients for my pumpkin pancake bowl
It’s a weekday ritual: mix → zap → top. Five minutes, real protein, seasonal extras. I love pancake bowls so much I have jars of oats and the Kodiak mix right next to my coffee maker along with a 1/3 cup measure so I can whip ’em up in no time. For these pumpkin pancakes II transfer a can of pumpkin puree into a weck jar and stash it in the fridge (I’ve got it down to a science!)
- Pumpkin puree
- Rolled oats (you can also add wheat germ, or your favorite seeds)
- Kodiak Whole Grain Power Pancake Mix

how to make your pumpkin pancake bowl
So easy my 3 year old granddaughter stands on a chair and does it with me!
step 1. Stir together
- pumpkin puree
- Kodiak whole grain power pancake mix
- a good pinch of rolled oats
- a dash of pumpkin spice
- water
step 2. Microwave
- 1 1/2 minutes on high. My microwave is 1200 watts. Note: if yours is higher or lower your time will vary slightly. The size and shape of your mug can make your time vary by a few seconds as well.
- If using chocolate chips mix half into your mix, then microwave for 30 seconds. Sprinkle the rest on top and continue cooking for 60 more seconds. This is so they don’t all sink to the bottom.

For pancake bowls I stick to this formula, the microwave won’t cook a larger amount of batter evenly.
You can use milk but the texture is better with water.

It will puff up in the center and just start to pull away from the sides. The very center might look slightly underdone, but will continue cooking after you pull it out of the microwave. If your center looks like raw batter, you need to cook it a bit longer.

Pumpkin Pancake Bowl
Equipment
- microwave safe bowl or mug
Ingredients
- 1/3 cup Kodiak whole grain power cake mix
- 1 Tbsp rolled oats
- 1 Tbsp pumpkin puree
- 1/4 tsp pumpkin spice
- 1 pinch of salt
- 1/3 cup water
toppings, optional
- 1/2 Tbsp butter
- 1 Tbsp maple syrup
- 1 Tbsp chopped toasted pecans
Instructions
- Mix the 1/3 cup Kodiak whole grain power cake mix the 1 Tbsp rolled oats, 1 Tbsp pumpkin puree, 1/4 tsp pumpkin spice, 1 pinch of salt and 1/3 cup water in your mug. Stir to dissolve the dry flour, but the batter will still have a few small lumps.
- Microwave for one and a half minutes (90 seconds).* Remove and add a pat of butter, toasted pecans, and maple syrup, if desired.
- Nutritional info is for pancake bowl only, butter and syrup add 4g fat, 12g sugar, and 85 calories to your bowl. So even “dressed” with butter and maple syrup, it’s still a high-protein, higher-fiber, whole-grain breakfast ~ way more balanced than toast or most cereal.
Notes
- Stir half in with the batter.
- Microwave for 30 seconds, then add the rest on top.
- Continue microwaving until the pancake is done.
