Flourless cookies have completely run away with my heart. I made my first batch a couple of years ago, and I’ve been happily experimenting ever since. Let me say right from the start that these cookies aren’t just a gluten free work-around for people who can’t eat regular flour…they are fabulous all in themselves. They have a great soft chewy texture, tons of flavor, and they give me a real protein packed boost of energy. I feel good about eating them, which just makes me enjoy them all the more.

Is thete a way I could substitute eggs for these? I have a love one with an egg allergy.
I’m not sure which cookies you are taking about Brandi, but I know a lot of them rely on eggs to bind them. Maybe another reader will have an answer for you, and I’ll check into it and get back to you here…
I am gluten-free and at altitude so find cookies some of the trickier things to make! I love flour-free cookies as it takes most of the concern out of it (there can be other ingredients that add gluten but it is more rare). Definitely will be saving this Sue!
