Flourless cookies have completely run away with my heart. I made my first batch a couple of years ago, and I’ve been happily experimenting ever since. Let me say right from the start that these cookies aren’t just a gluten free work-around for people who can’t eat regular flour…they are fabulous all in themselves. They have a great soft chewy texture, tons of flavor, and they give me a real protein packed boost of energy. I feel good about eating them, which just makes me enjoy them all the more.
I’ve gathered together 25 of my favorites from fellow bloggers, so if you’re interested in experimenting with the concept yourself, you’ve got the best of the best right here. Many of the recipes rely on nut butters as a base, and contain no flour or butter at all. Others have got a little bit of oat, or nut ‘flour’ to bind the dough. I stumbled upon this list and got so excited by the gorgeous photos and the gluten-free variety. My goal is to try every single recipe, so as of today, 1 down and 24 to go! I decided to start at the end of the list only because I’m a total chocolate and rocky road addict. I followed the recipe to a ’T’ and was worried about the comments that mentioned big, sticky, runny messes. This did not happen in my case. In fact, I baked them for 12 minutes and they mostly look like the picture and were tasty and the soft melty/crispy combination was nice. I won’t say delicious because they were over the top too sweet. My family agreed. Secondly, I did use a very small scoop and they do indeed expand so I’m glad I left plenty room between them. Finally, 4-5 mini marshmallows are too much for the small scoop even if the batter expands. The marshmallows also expanded and they didn’t really look cute anymore as the marshmallows did not keep their shape. They looked like a cookie with a light dirty brown marshmallow icing. With half of the batter remaining I decided to mix some marshmallows straight into the batter and that proved to be a big mistake. They expanded even more and didn’t really enhance the flavor or the look. Glad I tried these but they were definitely not impressive enough to try again.
Everything sounds amazing. I can wait to try some of these recipes. I was just diagnosed with MS and have been eating GF but not like I really should. In hopes of keeping inflammation down ,I’m going all in GF.
