One pot meals mean only one pan to clean up at the end. Sign me up. It might be in my Instant Pot, my favorite cast iron braiser, or a sturdy sheet pan, but when I can cook an entire meal all in one, it’s a good night!
It was an impossible task to choose between all my risotto recipes for this post — I could have just as easily chosen my Cheddar and Sage Risotto, but the earthy autumnal mushrooms pushed this one to the top of the list.
