One pot meals mean only one pan to clean up at the end. Sign me up. It might be in my Instant Pot, my favorite cast iron braiser, or a sturdy sheet pan, but when I can cook an entire meal all in one, it’s a good night!

It was an impossible task to choose between all my risotto recipes for this post — I could have just as easily chosen my Cheddar and Sage Risotto, but the earthy autumnal mushrooms pushed this one to the top of the list. This one-pan wonder is an awesome way to feed a family or a small crowd. I especially love it served with a bold, grainy mustard and hearty whole wheat hot dog buns. Toasted Almond Rice Pilaf
I love this colorful pilaf as vegetarian main dish during the autumn months. Generous amounts of toasted nuts and dried fruit keep it from feeling too lightweight, and the flavors are bold and unexpected. The colors? Spectacular.

It’s a simplified one pot version of a French classic, and so satisfying to make and to eat. Practice on the family or your significant other, and then serve it up for a special feast this winter. You’re limited only by the size of your pot.
