Seasonal flavors like gingerbread are all the more enticing because they’re not in our life most of the year. And over time the flavors of gingerbread become associated with the warmth and joy of the holiday season, making it all the more delicious. So when it’s gingerbread season, it’s gingerbread season in my kitchen! I go all out with gingerbread recipes of all kinds.

“Gingerbread” can refer to the cookies made using gingerbread spices, or to the flavor profile in general, which comes from two main ingredients. The first is molasses, which is responsible for the dark color and slightly bitter note that is characteristic of gingerbread. The second is, of course, spices! Ginger plays a starring role, but cinnamon, cloves, allspice, nutmeg round out the complex flavor. Even more unusual spices like mace can make an appearance, too.
