Can we talk ham? I think if I’m being honest I love the little shards, shreds and random bites of meat even more than that big slice on my dinner plate. Ham was made for leftovers, and the more creative ways I can dream up to use it, the better! Below are some recipes ideas, but often I’ll just wing it ~ ham has an affinity for carby, creamy, cheesy foods so think about adding it to your favorite mac and cheese, or maybe to mom’s potato salad. Think about adding ham to my French Potato and Onion Gratin, or my Sweet Corn Spoonbread Casserole ~ yum!

Since my guy has arthritis issues he follows a gout diet. We eat pork and chicken. A lot. When searching for ways to use leftover ham I found this recipe: Ham Balls in Peach Halves (https://www.thriftyfun.com/tf13843942.tip.html. ) I’m not big on ham, but I could eat these 2-4 times a month. We just use our grinder attachment for the Kitchen Aide to grind the ham and pork together unless we find good looking ground pork at the grocers’. One third of the recipe makes 7 meatballs, if you use an ice cream scoop.
