Raspberries are the queen of summer berries in my book. From layer cake to sorbet, these delicious raspberry dessert recipes will keep you enjoying these juicy gems for the whole season and then some!

why we love raspberries
Raspberries are probably my favorite summer berry. They have such a fantastic, sweet-tart flavor that plays well in so many different kinds of recipes (especially desserts!) I cook with them fresh and frozen, but tend to prefer frozen berries for baking as they are easier to mix into batters and doughs.
I’m lucky enough to have a little raspberry patch in the backyard, and I like to pick them fresh and pop them straight into freezer bags to use all winter long.

raspberry lemon layer cake
One of the most popular recipes on the blog (ever!) this raspberry lemon layer cake is pure summer in cake form. The tartness of lemon pairs surprisingly well with the berries.

easy raspberry galette
For unadulterated raspberry deliciousness, it doesn’t get much better than this simple galette. Buttery, flaky pie dough encases a filling of berries that doesn’t really need that scoop of ice cream on top, but it doesn’t hurt.

raspberry almond bars
Raspberry and almond is one of my all time favorite flavor pairings, and it works beautifully in my beloved shortbread crumble bars. It’s like a heavenly raspberry pie on the go!

raspberry crisp
A bright raspberry crisp is the Queen of summer raspberry desserts. The mere thought of all those raspberries bubbling underneath that crunchy crust is intoxicating even before you take that first bite.

easy raspberry slab pie
Refrigerated pie crust makes this shortcut recipe super easy and perfect for sharing with a crowd this summer. Make it for the family cookout and watch it disappear!

raspberry lemon blondies
These delightful raspberry bars sit somewhere between a shortbread bar and a blondie and they are bursting with tart lemon and berry flavor!

When you want to impress, but don’t want to fuss, enter the elegant-yet-rustic pavlova! Marshmallowy meringue gets topped with fresh whipped cream, tart raspberry sauce and fresh berries for a stunning dessert.

raspberry coffee cake
Fabulous berries folded into fluffy crumb cake ~ probably the best way to start the day, ever. If you freeze summer berries you can have this in the dead of winter, what a luxury!

raspberry champagne sorbet
The flavor of raspberries just sings in this elegant sorbet. Champagne lends a lovely, subtle flavor to the sorbet and also helps to keep it from getting icy and hard in the freezer.

lemon glazed raspberry bread
When I want to bake something special, but I don’t know what to make, most of the time I make a loaf cake! This delicious, moist loaf is studded with fresh raspberries and topped with a tart lemon glaze.

vanilla cake with raspberry buttercream
Raspberry buttercream. Don’t those words just sound good together? This classic yellow layer cake is thickly iced with loads of it.

raspberry eton mess
This iconic British dessert is all about contrast. Crunchy meringue, soft dollops of whipped cream, and juicy fruit create all sorts of textural interest, setting the stage for the bright, tart raspberry flavor to pop. Love a pavlova? Think of this as the “deconstructed” version.

don’t forget about black raspberries!
