sweet recipes for Easter brunch

In our family we tend to do Easter brunch rather than an elaborate, heavy dinner. But just because we skip the whole ham and casseroles thing doesn’t mean we don’t go all out. Here are some of our favorite Easter morning bakes…

strawberry buttermilk cake

This is the most glorious cake!! I’ve made the strawberry version and just yesterday made a fresh blueberry version. This cake is outstanding. It is easy to prepare and the results are out of this world delicious!!

carrot coffee cake with cream cheese glaze

My friends insisted I tell you how they enjoyed this cake. With every bite they took, all I heard was “This is the Best.” They also had a piece to take home. (After I got mine). I didn’t change the recipe at all, it is really easy to make.

rhubarb scones

These are so delicious!! I’m eating my second one right after the first one, yup – barely cooled from the oven… These are definitely going to be a staple in my kitchen. The rhubarb doesn’t taste tart in these either.

strawberry lemon blondies

Wow, we didn’t even wait to glaze before taking a few bites and man oh man are they delicious. I was looking for a way to use up some strawberries and I love that these allow the natural flavor to come through without any type of maceration. I’m sure the glaze will make them even more irresistible. Thanks for the great recipe.

Mary Berry’s lemon drizzle cake

This cake is so deliciously moist and tangy encased in a crunchy exterior that looks like shiny crystals. This is definitely going on my list of favourite ‘go to’ cakes!

easy no yeast cinnamon rolls

These were delicious! I’m usually a traditional sticky bun maker, but on a hot July day these were perfect to make. I only used about 1/2 of the glaze and it was still plenty. Will definitely be making again and again.

rhubarb and almond cake

This cake is incredibly moist and fluffy, not too sweet. The crunch on the top from the almonds and Demerara cane sugar with the tartness of the rhubarb is just wonderful!

Rhubarb Cake, sliced on parchment paper

blueberry lemon breakfast cake

This was so tasty! Growing up my family had a tradition of making coffee cake every Sunday and I’m bringing it back during this quarantine. The only variations were to use half and half with lemon juice instead of buttermilk and turbinado sugar sprinkled on top. Lemony, fruity, light and flavorful without being too sweet — in a word: perfect.

I made this cake today and it is the very best cake I’ve ever baked. Not very sweet, but the flavors are incredible! I’ll make this again, and again.

This recipe is perfection. We had it last night for dessert with ice-cream. This morning we had it with butter for breakfast. It was so fast and easy to put together. You have given me another keeper. Thank you for sharing it with us.
